At the Fire Crab, we always have at least 4 raw types of oysters in stock. This week, we have Kumamoto, Kumiai, Fanny Bay, and Calm Cove. We shuck them fresh to order every time and we always check to ensure that we only serve you fresh ones. If there's even a remote possibility that the oyster is bad, we will toss it. If you don't have a preference out of the 4 choices, you can always get the sampler, where you will have 3 freshly shucked oysters of every type. It's a good way to figure out what you prefer.
